Last week, we sat down with the esteemed Chef Chris Wellmon, Executive Chef of Cena Ristorante at The Chateaux Deer Valley, in hopes that he might divulge one of his beloved recipes. He agreed to share a local favorite, his famous Salsa Verde sauce. This is a truly versatile sauce that pairs nicely with a variety of different dishes and is super easy to make.
“It goes well on everything- grilled vegetables, chicken, shrimp, beef dishes. I can’t find anything it doesn’t go well with.”
Chef Wellmon’s Salsa Verde:
8 anchovy filets
2 TBS parsley leaves
1 TBS chives
½ cup extra virgin olive oil
